Vegan Eats : Caramel Energy Bites

These easy vegan caramel energy bites are so good when you just want something sweet but you can’t (shouldn’t) eat cake.

Ingredients

  • 1 cup dates pitted
  • 1 cup cashews
  • 1 cup shredded coconut
  • 2 tablespoons hemp hearts
  • 2 tablespoons nut butter (I used almond butter)
  • 2 tablespoons maple syrup
  • 1/2 tablespoon cinnamon
  • optional : a pinch of salt to make them “salted caramel”.

Instructions

  • In the bowl of a food processor pulse the dates and cashews together.
  • Add the coconut, hemp seeds, nut butter, syrup, sea salt (if using) and cinnamon, and pulse until a dough forms and sticks together when you press it between your fingers.
  • Form 1″ balls with your hands and place in a parchment-lined Tupperware.
  • Keep in fridge and enjoy!
